Ingredients (Serves 2)

  • 1 tsp olive oil
  • 1-2 cloves garlic, minced
  • Sprinkle of crushed red pepper (optional)
  • 1 cup Agaricus blazei Murill mushrooms, sliced (Left over from Agaricus blazei tea)
  • ½ bunch of Swiss chard, chopped
  • 2 cups baby spinach
  • Salt and freshly ground black pepper to taste

Directions

  1. In a large, non-stick skillet, heat olive oil over medium heat.
  2. Add garlic and crushed red pepper (if using) to the pan and sauté for 2 minutes until fragrant.
  3. Add sliced Agaricus blazei Murill mushrooms left over from making Agaricus blazei tea and Swiss chard. Cook, stirring frequently, for an additional 5 minutes.
  4. Add baby spinach and cook until just wilted, about 1 minute longer.
  5. Season with salt and freshly ground black pepper to taste. Serve warm.
